2 shop-bought pre-cooked beetroot (unpickled)
200g Greek yogurt
1 clove of garlic, grated
Salt and black pepper, to taste

Method:
To make the dip, blend all the ingredients until smooth, or alternatively, grate the beetroot and garlic, and stir them into the yogurt for a beautiful hot pink dip!
Taste and adjust seasoning if needed, and serve with warm pitta, vegetable batons, or spoon over roasted veggies.
