Prue’s Spanish Beans on Fried Bread

Ingredients:

Oil for frying

2 thick slices bread

80g sliced chorizo

½ tsp smoked paprika

6 ripe cherry tomatoes

400g can white (cannellini) beans

1 tbsp chopped parsley leaves, plus a few whole leaves

This is a LOT more interesting and delicious than beans-on-toast! It’s the perfect speedy supper for the family — or a late-night snack that even non-cooking teenagers could manage. An artisan baker’s white bloomer loaf would be best for this, but to be honest, any thick loaf will do.

Method:

Put a splash of oil into a large frying pan, swirl it round to coat the surface, then fry the bread slices in the pan, turning to brown both sides.

When well browned, take the bread out and put in the chorizo slices, smoked paprika and the cherry tomatoes, with a tablespoon more oil if necessary. Fry, shaking the pan occasionally, until the tomatoes are softened and the
chorizo is beginning to brown.

Drain the beans, add them to the pan and simmer all together until hot. Stir in the
chopped parsley. Serve on the toast, with, just for the sake of appearances, a few parsley leaves
on top.

TIP: If you haven’t got any plain cannellini, you could just doctor a can of baked beans. The addition of chorizo works wonders, and real chunks of tomato will lift the flavour.

Why not get a selection of different dried or cooked beans and lentils and try and capture the different colours, textures and shapes with colouring pencils? Or make a rainmaker with an empty, clean lidded crisp tube or milk bottle – pour in some dried beans or lentils, decorate them and seal the lid tightly before shake, shake, shaking!

Why not explore pulses through touch and sight? There are so many different kinds of beans and lentils. Get a few types that are a good mix in size/shape and colour, dried vs cooked, etc. and see if you can and your child can describe them. What do they look like? What colours, shapes and patterns can you see? What do they remind you of? What do they feel like? Are they rough, smooth, slimy, hard?
