Not sure how to make aubergines taste delicious without loads of effort? Try our simple roasted aubergines to stir through tomato pasta, top pizza, mix into a couscous salad, serve on the side of cooked fish or meat, or find your own may to serve it!
Method:
Preheat the oven to 220C/gas 7. Wash, dry and chop the aubergines into large cubes. If you are not a big aubergine fan and particularly if you find it too bitter, peel or cut off the skin first. Toss the aubergine cubes in the oil and season with a small pinch of salt and pepper.
Lay out on a baking tray in a single layer and cook in the oven for 20 mins. Give them a turn to cook for a further 5-10 mins on the other side until golden on the edges and soft in the middle, but not dark or shrivelled at all.
Eat as is as a side, or stir through some fresh chopped herbs or lemon/lime juice, some tomato sauce, or your favourite flavouring. Also great as an addition to pasta sauce or top a pizza with!
